The 3-inch straight parer is extremely useful when you need to make straight intricut cuts. The curved blade allows you to use it in the same fashion you would an exacto knife. The Wusthof Classic Ikon is culmination of all the best features of each of the Wusthof knife lines. The combined riveted handle design is combined with a contoured shape to add comfort and control. The Classic Ikon adds a rear bolster that acts as a counter balance when using the knife. This second bolster adds significant blade control. Classic Ikon has a unique forward bolster as well. The forward partial bolster is designed so you can sharpen the complete length of the blade. This bolster is also curvered inwards to allow your fingers greater control while holding the knife by the blade. Located in The Cutlery Capital of the World, Solingen Germany, the Wusthof factory history goes back as far as 1814 when the company was listed with the Duchy of Berg. To this day, the company remains family owned. Throughout it’s history, Wusthof has focused almost solely on the manufacturing of forged knives for the professional chef and home cooking enthusiast. Give each side of the knife an equal number of swipes (about 20). Sharpen the other side of the blade as before, this time using the other side of the honing steel. And remember to always protect your fingers. See larger image. Tips For Use and Maintenance Wash knives immediately after use with a mild soap. Avoid prolonged contact with leftover food. Do not use bleach, soda or detergents containing chlorine or chlorides ions because they rust the steel and may cause it to lose its shine. Avoid rubbing your knives with abrasive products, hard cloths, and metallic or synthetic cleaners. If you use a dishwasher, place your knives in with the blades facing up and in separate containers from the rest of your cutlery to avoid scratching. Avoid leaving your knives submerged in water for long periods of time, especially in hard or salty water that can affect metals. Dry immediately with a soft cloth.
