All-purpose cream is a staple in every Filipino household. Its rich and creamy texture make it a versatile ingredient for both sweet and savory dishes, and the fact that it can last either in the refrigerator or in the dry pantry makes it easy to store.

All-purpose cream is different from regular heavy cream or whipping cream because instead of containing a large amount of milk fat, it is made up of a mix of water, non-fat milk solids, emulsifiers, stabilizers, and a hint of milk fat. This means that while you can’t whip it like you can whip heavy cream, all-purpose cream still provides rich flavours and smooth textures for your dishes. Here are some of the ways you can use all-purpose cream in the kitchen. While it can be incorporated into different kinds of dishes, you can also keep it simple and use it as a topping for your breakfast pancakes or fruit cups.

  • Mango + Cream Desserts: Mangoes and cream will always be delicious together! In a pan, combine the mangoes, calamansi juice, sugar, and water. Place the pan on medium heat and cook the mixture while stirring frequently with a silicone spatula or wooden spoon. Wait until the mixture thickens a bit then remove from heat and transfer to a bowl. Place the bowl in another bowl with ice and water and stir until the mixture becomes cold. Beat cream and powdered sugar in a separate bowl until combined. Fold in the vanilla extract. Fold in ¼ of the cooked fruit sauce. Divide the flavoured cream into bowls then top with the remaining fruit sauce.
  • Pan-Fried Chicken in Garlic Cream Sauce: Pair simple pan-fried chicken with an indulgent, creamy garlic sauce. Be generous with it and serve it with hot rice. Heat enough oil in a deep saute pan for deep frying. Season chicken thighs on both sides with salt and ground black pepper, to taste. Place chicken skin side down in the oil. Deep fry chicken until cooked through. Transfer to a plate, and set aside. Heat oil in another pan over low heat. Add garlic and tomatoes, stirring until softened. Add cream, pesto, water, and half the basil. Stir to combine. Season with salt and pepper to taste. Return chicken to the pan, and cook until heated through. Adjust seasoning accordingly. Top with more basil, and serve while hot.
